A Working Tool First. A Western Statement Second.

A cowboy knife is a fixed-blade working knife in the Western ranch tradition, built for the daily cutting tasks of cattle work, ranch maintenance, camp chores, and life outdoors. Unlike hunting knives optimized for game processing or tactical blades built for defense, the cowboy knife is a general-purpose ranch tool: capable enough for hard cutting, light enough for all-day belt carry, and forged from materials that hold up in field conditions. Stag Steel Crafts builds these knives from Texas, where the Western knife tradition is not nostalgia, it is practical heritage.

Steel Options, Choose Your Edge

Steel Type Edge Retention Field Sharpening Best For
Damascus (1095/15N20) High, pattern-welded layers hold a keen edge Moderate, standard stone works Daily ranch carry with distinctive character
1095 High-Carbon Good, practical for daily use Easy, sharpens quickly on a basic stone Maximum simplicity, traditional feel
Rasp Steel (Reclaimed) Very high, tool steel formulated for toughness Moderate, harder steel, takes patience Rustic character, extreme durability
D2 Tool Steel Superior, longest edge retention in the lineup Harder, requires more effort to sharpen All-day cutting without sharpening stops
Stainless Damascus (VG10/15n20) High, pattern-welded layers hold a keen edge Moderate, standard stone works best for long term and durability

Handle Materials, Grip That Works as Hard as You Do

A cowboy knife handle must perform across weather, sweat, and sustained use. Every Stag Steel  handle is selected for real-world grip performance. Most models feature brass guards and hardware, the traditional Western fitting.

Sheath Carry Styles, How You Wear It Matters

For a cowboy who wears a knife all day, the carry style determines whether the knife is accessible, comfortable, and actually used. All sheaths are hand-stitched from thick cowhide leather, molded to the specific knife for a secure fit and clean draw. Right-hand and left-hand options available.

1Pancake Sheath, All-Day Comfort+
Close-to-body carry with a flat profile that sits against the hip. The pancake sheath distributes the knife's weight across a wider area of the belt, reducing pressure points during long days on foot or in the saddle. Ideal for ranchers who wear their knife from sunup to sundown.
2Cross draw Sheath, The Horseback Standard+
Positioned on the weak side with the handle angled across the body for a left-to-right draw. This is the traditional horseback carry, seated riders reach across their body for the draw rather than reaching behind or down, where a vertical sheath can snag on tack or saddle rigging.
3Horizontal (Scout) Carry, Seated-Work Ready+
The knife rides horizontally on the belt, handle toward the dominant hand. Comfortable for seated work, driving, or any situation where a vertical sheath interferes with sitting posture. A practical choice for ranchers who split their day between a truck, a tractor, and on-foot work.
4Vertical Belt Sheath, Classic & Universal+
Traditional Western vertical carry, handle up, blade down on the dominant side. The classic visual and the most universally practical option for on-foot work. Simple, reliable, and what most people picture when they think of a cowboy knife on a belt.

Caring For Your Cowboy Knife

A cowboy knife maintained properly will outlast its owner. The routine is simple but non-negotiable.

  • 1Wipe the blade clean after each use. Remove moisture, debris, or organic material before sheathing. Never store a dirty blade.
  • 2Oil the blade regularly. A thin coat of mineral oil, food-safe oil, or gun oil prevents corrosion. Damascus and 1095 steel benefit particularly from consistent oiling; D2 is more corrosion-resistant but still benefits.
  • 3Store in a dry location. Avoid sealed, humid environments that trap moisture against the blade. The leather sheath should be stored separately for long-term storage.
  • 4Sharpen with a field stone. A medium-grit sharpening stone restores a working edge on any steel type in this collection. Maintain a consistent angle of approximately 20 to 25 degrees per side.
  • 5Condition the leather sheath. Occasional treatment with leather balm , oil keeps the sheath flexible and weather-resistant through years of use.
