Handmade Chef Knives
A chef knife is the blade you reach for first and put down last. Ours are hand-forged from copper Damascus, ground and finished one at a time, and built to handle the work a real kitchen puts them through.
Every blade in the collection is shaped by hand rather than stamped from a sheet, so the grind, the balance, and the edge all get individual attention before the knife leaves the shop.
Copper Damascus Steel
Our chef knives are forged from copper Damascus, also called Cu-Mai. Layered high-carbon steel with copper accents gives you two things at once: a keen, hard-working edge and a pattern that no two blades share.
High-carbon steel takes a finer edge than most stainless and holds it well through long prep sessions. The trade-off is that it wants a little care. Hand wash, dry right away, and give it an occasional wipe of food-safe oil.
Over time a high-carbon blade develops a patina, a soft grey or blue-toned darkening across the steel. Patina is normal, it is not rust, and it helps protect the blade underneath.
The full range of patterns and handle pairings is in the copper Damascus chef knives collection.
Full Tang Construction and Handles
Each chef knife is built full tang, with the steel running the entire length of the handle. Full tang is what gives a knife its balance point near the bolster and keeps the blade from loosening under years of use.
Handles are fitted in hardwood, rosewood, and resin, each chosen to sit securely in a wet hand and to work with the copper detailing in the blade rather than fight it.
Choosing the Right Chef Knife
A few things worth thinking through before you pick one:
- Blade length. Longer blades cover more board in a single stroke and suit break-down work on large produce and proteins. Shorter blades are easier to control in a small kitchen and less intimidating if you are still building knife skills.
- Your cutting style. Rock choppers want more belly curve in the blade. Anyone who push cuts or prefers a flatter, more deliberate stroke is better served by a straighter profile.
- Hand size and grip. Anyone working in a pinch grip, thumb and forefinger on the blade, should weigh handle thickness carefully. A handle that feels chunky in the shop feels worse after an hour of prep.
- Maintenance appetite. High-carbon Damascus rewards a cook who dries their knives. If a blade is going to sit wet in a sink overnight, it is the wrong steel for that kitchen.
- One knife or several. A chef knife covers most prep on its own. If you want matched blades for different jobs, the kitchen knives set collection puts them together in one purchase.
What a Chef Knife Actually Does
The wide blade and curved belly make a chef knife the most versatile tool on the board. Slicing onions, breaking down a chicken, dicing mirepoix, mincing herbs, portioning squash, most of what happens during prep runs through this one knife.
Home cooks tend to use it for the majority of their cutting. Professionals reach for it constantly through service and want a blade that stays sharp deep into a shift. If you want to start with our most popular blades rather than browse everything, see the best chef knives selection.
Care and Sharpening
- Hand wash and dry immediately. Never put a high-carbon knife in the dishwasher.
- Store on a magnetic strip, in a block, or in a sheath. Loose in a drawer chips edges.
- Cut on wood or plastic. Glass, stone, and ceramic boards dull an edge fast.
- Hone on a whetstone as the edge starts to feel less crisp, and oil the blade lightly between uses if the kitchen runs humid.

Frequently Asked Questions
What makes a good handmade chef knife?
A good chef knife pairs a sharp, well-balanced blade with a comfortable handle and steel that holds its edge. Hand-forged knives get individual attention to the grind and balance that mass-produced blades rarely match.
What steel are your chef knives made from?
Our chef knives are forged from copper Damascus (Cu-Mai), a layered high-carbon steel with copper accents that delivers a keen edge along with a one-of-a-kind pattern.
What size chef knife should I buy?
Blade length comes down to your kitchen and your comfort. Longer blades move through more food per stroke and suit larger prep work. Shorter blades give you more control and feel easier to manage on a smaller board or in a smaller hand.
Is a Damascus chef knife good for everyday cooking?
Yes. Underneath the pattern is a working blade that slices, dices, and preps with precision. Plenty of owners use theirs as a daily driver and keep it on the counter rather than tucked away.
Are your copper Damascus chef knives stainless?
Copper Damascus is a high-carbon steel rather than stainless, so it rewards a little care. Hand wash and dry right after use, and oil it occasionally to protect the edge and the copper detailing.
Will my blade darken over time?
Most likely, yes. High-carbon steel develops a patina with use, a subtle grey or blue tone across the blade. Patina is a normal part of owning a carbon knife and forms a protective layer on the steel. Active orange rust is different and is prevented by drying the blade after every wash.
How should I care for a handmade chef knife?
Hand wash and dry it right away, never the dishwasher, and store it on a magnetic strip or in a block. A light food-safe oil keeps a high-carbon blade in good condition.
How often should I sharpen a chef knife?
Hone whenever the edge starts to feel less crisp, which for a busy home cook usually means every few weeks. Full sharpening on a whetstone is needed far less often if you hone regularly and stay off glass and stone boards.
Are your chef knives full tang?
Yes. Each chef knife is built full tang, giving the balance and control that precise kitchen work depends on.
What handle materials do your chef knives use?
Hardwoods, rosewood, and resin, chosen to feel secure in hand and to complement the copper Damascus blade.
Does a handmade chef knife make a good gift?
Yes. A copper Damascus chef knife suits home cooks and professional chefs alike, and arrives presented for weddings, housewarmings, and holidays.
Do you ship chef knives to the USA and across Canada?
Yes. Every knife is forged by hand in Canada with free shipping across Canada, plus affordable shipping rates to the USA and other countries.
